Chicken Salad Pitas

I've been trying new recipes lately and only a fraction of them have been good enough to consider making again. I found this recipe for Chicken Salad Pitas in a magazine and it was really good. It's light and healthy. Even Blaine went back for seconds and he almost NEVER does that! Here's the recipe:

2 tsp. Dijon mustard
1 tsp. balsamic vinegar
1 tsp. curry powder
1 garlic clove
1 TB extra virgin olive oil
2 cooked, chopped chicken breasts
1 stalk celery, chopped
1/3 c. chopped roasted red peppers
2 TB chopped chives
¼ c. each cashews & raisins (I used dried cranberries because I like them better.)
3-4 whole wheat pitas

Dressing: Whisk mustard, vinegar, curry, and garlic. Whisk constantly, slowly adding olive oil.
Combine chicken, celery, red peppers, chives, cashews, and raisins. Mix in dressing.
Cut pitas in half and fill with mixture.

We are so much alike! I just blogged about trying new recipes too. Maybe it is the cooler weather making us want to cook?? I am going to try this for sure!
